Produced from Pugnitello grapes, an ancient Tuscan vine that was only recently rediscovered, this is the wine that symbolises protection of native biodiversity. The late-ripening grapes provide for a well-structured and elegant wine.
- Grape variety: Pugnitello
- Production area: Magliano in Toscana
- Annual production: 3,600 bottles
- Grape harvest: manual, in late September
- Vinification: fermentation in steel at a controlled temperature, with frequent pumping over the dregs. Fermentation with indigenous yeasts, with post-fermentation maceration. Aged for 12 moths in tonneux, and refined for six months in the bottle.
- Flavour and aroma: intense red. The aroma is characterised by hints of black fruits, currants, spices and tobacco. Enveloping, structured and very persistent on the palate.
- Pairings: game, red meats and first courses with ragout, aged cheeses.
- Serving temperature: 16-18°C
